Camp Hebron Baked Oatmeal

I am SO SO SO Excited to be implementing this series into my weekly blogging!! Wake & Bake Wednesdays will introduce a new recipe for you to try. The majority of these will be some of my personal favorites, but potentially submitted by faithful fans or followers. Although the name of this series is Wake & Bake, I will still be inserting recipes that do not require ‘baking’. I have a love and passion for healthy food, so I may throw in some new ways or ideas to try veggies and other foods. There may be new ideas for lunch, dinner, or dessert as well as breakfast (:

For the first recipe, I will be sharing with you a family favorite. For the past 15 years, we have vacationed in the same location in Pennsylvania. Ever since I can remember, we were served Baked Oatmeal twice within the week. We knew baked oatmeal before it was popular and found all over Pinterest. Now, I have shared it with so many friends and family from all over & they LOVE it. I have people text me often and ask me to remind them of the Baked Oatmeal recipe. It makes me SO happy!! There are so many recipes for Baked Oatmeal, but this is the best & a from a special place where we grew up, Camp Hebron!!

The great thing about Baked Oatmeal is I like to think of it as a ‘base’, and the rest of the options are ENDLESS. I have tried it a couple different ways myself. Below, you will see an image of just the baked oatmeal with some fresh fruit and almond milk poured over it. We grew up being served warm peaches poured over top of the baked oatmeal, which is also a favorite. Don’t care for fruit? No problem, you can add pecans, raisins, chia seeds, or anything you want. Some of you may actually like some of the extras to be baked in the recipe instead of being poured over top & I say GO FOR IT. I’ve made it before with dark chocolate chips and raspberries baked in the recipe. So good!!

This recipe calls for a lot of oil so sometimes I substitute half or all the oil for applesauce. If you have other ways of making your food healthy, go for it. I also add a TON of cinnamon into mine, which my mom doesn’t appreciate, nor did my roommate from college. Make it what YOU want! Enjoy friends!

Camp Hebron Baked Oatmeal

[Whisk adding one at a time in medium deep bowl:

5 eggs

1 cup + 2 Tbsp oil

2 cups brown sugar

2 1/4 cups milk

[Mix in LARGE bowl:

6 3/4 cups quick oats

1 1/2 Tbsp baking powder

1 1/2 tsp salt

Mix & pour into a greased 9×13 pan. Bake @ 350 45-60 minutes

***Pour your choice of fruit, dried fruit, or nuts over top!
