Tis the season for APPLES & I am SO SO SO EXCITED!!!! I love apple season – apple picking, apple peeling, apple eating, apple sauce making, apple baking!! You name it, I LOVE IT!! This is one of my absolute favorite recipes. I make it all the time because it is so easy & so yummy. My favorite is obviously the topping. I love it so much that I double it, sometimes TRIPLE it. Now, when I say I double it, I wing it. The topping alone calls for one stick of butter & by no means do I ever put two sticks to double it. I have made it enough times, I know what works to keep the crumbles together without adding all the extra butter and brown sugar.
Filling Ingredients:
2 c. fresh cranberries, rinsed
3 c. peeled chopped tart apples
(or less tart so you do not use as much sugar)
1 c. sugar (I use like a half)
1 tsp. ground cinnamon (I use like 2Tbsp)
Pinch of Salt
Topping Ingredients
1/2 c. brown sugar
1/3 c. all-purpose flour
1 c. old fashioned oats
3/4 c. chopped pecans
1/2 c. (1 stick) butter, melted
Directions:
*Coat the cranberries & chopped apple in sugar, cinnamon, and salt and place in the bottom of 9×13 baking dish that has been lightly sprayed with non-stick cooking spray
*Melt the butter in a mixing bowl & add remaining topping ingredients and toss to combine. Sprinkle topping evenly over the fruit mixture.
*Bake uncovered at 325 for 1 hour
